Learn how to grind masala on a stone in the traditional way and discover how the spice transforms the flavour of mackerel cooked in hay – a rustic delicacy.Tuck into the tangy, sweet dish for lunch, all served in handcrafted earthenware crockery – it really adds to the authentic flavour. Then, with a full belly, you'll take in the traditional practice of cashew roasting. Let the rich, smoky aroma flood your senses as you learn about the methods passed down through generations of Goan villagers to perfect these nuts.
